Our third cocktail is the Marguerite (Johnson). We previously posted the Tim Daly version from his 1903 Bartenders Encyclopedia which differs a little from Harry Johnson’s 1900 New and Improved Bartenders’ Manual that we couldn;t resist making for this evening.

Our second cocktail is the Ruby Porto Tonico, a variant of the Porto Tonico which replaces white port with the ruby variety.

Our first cocktail is the Rosita. The Rosita is a Negroni variant of unknown origin, but it first appeared in print in the 1974 edition of the Mr. Boston Official Bartender’s Guide; the recipe we used is an adaptation by Gary “Gaz” Regan who upped the tequila and added bitters.
Blanco or reposado tequila are both acceptable for this cocktail; blanco will give more up-front brighter notes, while reposado will give an added oak depth which leans the drink more to the Boulevardier than the Negroni.
