The Spitfire is a wonderful take on a brandy sour which uses peach and dry white wine to good effect.
40 ml cognac
15 ml dry white wine (such as Sauvignon Blanc)
15 ml peach liqueur
20 ml freshly squeezed lime juice
10 ml sugar syrup
Lemon wheel for garnish

Half-fill a cocktail shaker with ice.

Add all ingredients and shake until well-chilled.

Strain into a cocktail glass and garnish with a lemon twist.
