4th #cocktail of #FridayNightCocktails on the 15th April: Brandy Collins

The Brandy Collins is a variation of the Tom Collins which switches out the gin for brandy. I’m more of a fan of brandy than I am gin, so I prefer this variation.

A variation of the Tom Collins using brandy instead of gin.

 75 ml brandy
 50 ml freshly squeezed lemon juice
 25 ml simple syrup
 150 ml sparkling water
 Lemon wheel for garnish

Fill a highball glass with ice.

Add the brandy, lemon juice and simple syrup to the glass and stir to combine.

Top off with the sparkling water and gently stir.

Garnish with the lemon wheel (optional).
