A delicious Italian twist on the gin based French 75 cocktail. This makes very good use of limoncello and prosecco for a summer drink with a strong Italian influence.

25 ml limoncello
100 ml prosecco
15 ml freshly squeezed lemon juice

Half fill a cocktail shaker with ice.

Add the dry gin, limoncello and lemon juice to a shaker and shake until well chilled.

Strain onto a champagne flute.

Top off with prosecco.

Garnish with a strip of lemon peel.
