An easy to make tropical mimosa to bring back memories of fine weather and the beach.

 45 ml coconut rum
 60 ml pineapple juice
 120 ml sparkling wine
 Pineapple wedge

Add coconut rum and pineapple juice to a champagne flute.

Top off with sparkling wine.

Garnish with a pineapple wedge (optional).
