Our second cocktail is the Paycheck. Created in 2017 by Jens Küpperbusch, Essen, Germany; unless you already have Earl Grey infused London Dry Gin, this cocktail needs an hour preparation, but is worth the wait.

Infused Tea Preparation
 60 ml London Dry Gin
 ½ tsp Earl Grey loose leaf tea leaves
Ingredients
 3 dashes Absinthe
 60 ml Earl Grey infused London Dry Gin
 15 ml Gentian Liqueur (such as Suze Liqueur)
 15 ml dry vermouth
 15 ml Triple Sec
 10 ml honey syrup (3:1 ratio of honey:water)

Infused Tea Preparation

Pour 60ml London Dry Gin into a small glass.

Add half a teaspoon of Earl Grey loose leaf tea leaves and leave for one hour.

Cocktail Steps

Rinse a chilled cocktail coupe with the absinthe and put to one side.

Half-fill a mixing jug with ice.

Fine strain the infused tea prepared gin into the mixing jug.

Add other ingredients to the mixing jug and shake until well-chilled.

Strain into the absinthe rinsed coupe.
